To a large bowl, add chopped tomatoes, herbs, red onion, feta cheese, flour, baking powder and salt and pepper.
Give everything a good mix until a thick batter is made. It should look like a very thick pancake batter.
Pour oil in a wide skillet and bring up to 375 degrees Fahrenheit. Use a tablespoon to scoop tomato mixture into the hot oil, gently pressing down to flatten.
Fry 4-5 tomato fritters until golden brown on both sides.
Once done, place fritters onto a paper towel lined plate.
