Place 1 small diced apple (150 g), 1 small diced pear (145 g), 1 small diced mandarin or orange (175 g), 1 small diced papaya (150 g), ½ cup blueberries or red grapes (75 g), ½ cup halved grapes (80 g), 2 tbsp pomegranate seeds (if using), and 1 sliced banana (150 g) in a medium serving bowl.
Add 1 ½ - 2 tsp chaat masala, ¼ cup orange juice, 1 tsp sugar (or maple syrup), and ⅓ cup cooked chickpeas (if using) to the fruit. Mix well to combine.
Adjust to taste—add more chaat masala for extra tanginess, sugar for sweetness, and juice to make it saucier. (There should be enough juice to slightly pool at the bottom.)
Garnish with fresh mint, if desired. Serve fresh or cover and refrigerate until ready to serve.
